I think the only difference is that the Torah is always in Hebrew (like the Qur'an is always in Arabic). So, while the content may be the same, some really orthodox Jews might get more offended that you translated it at all than you put dirty pictures in it.

My sister is deeply religious (modern orthodox Jew.)  Would it be appropriate to give this book to her as a gift?

Probably, it is gorgeous and a great Coffee Table Book.   (That is where my copy is)  The only offense that can be taken from the book is the offence the reader already has in them.

Also, are there any significant differences between the Jewish book of Genesis, and the Christian version?  (i.e. I'm assuming Crum used a Christian bible for this project.)

I'm housesitting right now so I can't refer back to his notes, but from what I remember he mostly worked from the NIV translation, but did consult with both Jewish and Christian scholars who were familiar with the Hebrew.

It doesn't.  It's just an illustrated version of the bible, so it does one story, then it does the other.  There aren't any commentaries or footnotes within the work itself - just verse by verse illustrations of the entire Book of Genesis.

Yeah, he pushes through that section with a wall of text and something akin to a giant family-reunion style picture of everybody milling around in a group, if I recall.  I'm honestly too lazy to turn around in my chair, reach up three feet, and open the book to tell you for sure.
