Yeah, you just need the corresponding Minecraft.jar file.  You can find them online for each version if you needed to downgrade or selectively upgrade.  You just need to replace the newer .jar with whatever version you want in the minecraft folder.

The real issue is if an upgraded client will work with an older server. If not, just have both .jar files and swap them out as needed.

Your list was very helpful, thank you.  Sadly no free voice with this host.  Can somebody in the group host a ventrillo server?  How much do they normally cost for hosting?
