Personally, and I've thought this for some time, I refer to them all as "IF's", and its right in so many ways, IF as in if they exist, and IF also stands for Imaginary Friend.
It's wrong because plurals don't use apostrophes.

Even if X is not the X used now, since that is so long ago, no one in this country would know that. For a first world country, many in it are less than third world in their knowledge.

As far as Xtians. For one thing I do not think it is that hard to write Christians but just like any word it comes down to intent. If you are using it to be derogatory and a dick you are a dick. If you are using it because it is easier then no big deal. It is like the word "queer". Just because there was a show called, "Queer Eye for the Strait Guy" doesn't mean that it is OK to run around insulting homosexuals by calling them "queers". Just because someone uses a word doesn't mean you can't use the word in a way that is wrong. But then again this is what I have come to expect from a bunch of crackers.

I generally say "gods"; that way I cover the Christian one as well as all the others.

This is an incredible example of thread necromancy, but that aside; I capitalize Zeus, Allah, Xenu (Should that actually be Christenu Vince?), Thor, and the Flying Spaghetti Monster.  Why wouldn't I capitalize God when it's used as a proper name?  I only object to capitalizing pronouns like he, his, and so on.  That has no reason behind it other than all things connected to the Christian god being sacred and worthy of higher reverence.

just totally guessing here, but maybe because "christ" has a long I (eye) and "chris" has a short I so if X is Christ, then Xian would be "chr(eye)stian"

It is but the "chi" or "X" stands just for "Chris" in most cases. When just writing the shorthand for "Christ" with the "X" you write "Xt". I have even seen Christopher writen as Xtopher and Christina as Xtina.
