Your favorite salsa recipe?

Making a big batch of salsa (10 people) for a friend's BBQ tomorrow, and I'd like to spend some time tonight trying a couple different recipes. I love spicy food... like REALLY spicy food, so I intend on making a spicy batch and a mild batch.

My favorite is fresco style with no base (just proportions of dices veggies with a little bit of salt), but I've had tomato base salsas that are great--they're better for chip coating as some people prefer, rather than scooping out piles of peppers as I prefer.

My standard recipe: 1 yellow onion, 4 medium-sized tomatoes, 6 jalapenos, 6 seranos, 6 habaneros, whole bushel of cilantro, half clove of garlic all finely diced with conservative amounts of salt and malt vinegar added to taste.

Any and all ideas are welcome!

Yeah, ended up sqeezing in 2 limes and a splash of red wine vinegar. It came out pretty good! Too much serano and too little habanero flavor... but good.

EhJayArr, mine is approximately your recipe, but replace 4 of the habaneros with poblanos and the vinegar with lime juice. If I want it hotter, I add ground cayenne. I like the heat of habaneros, but I don't really like their flavor much. They're mostly useful for keeping rabbits out of the strawberry patch. Also all ingredients except the salt and lime must come out of my garden. Well...no onions or habaneros this year, but I just moved house, what do you want from me? Actually, I'm about out of home grown cayenne too, and I didn't plant any of that this year either. Well crap, now you've pointed out all the inadequacies of my new garden. Are you happy now?

I think perhaps I'm projecting a bit...  ;D

Try 1/2 Yellow and 1/2 Red Onion for contrast in flavor. 

This may sound strange, but add a little Horseradish as well.   
Nobody these days holds the written word in such high esteem as police states do.  What statistic allows one to identify the Nations where Literature enjoys true consideration better than the sums appropriated for controlling and suppressing it.

A bit of roasted garlic can add a real nice dynamic to salsa.

I usually use a few tomatillos as well.
