I've recently re-discovered Nightwish, more specifically their newer stuff.
Ever since Tarja left (or got kicked out) they're focusing less on trying to sow together metal with opera and more on creating their own distinct brand of music, and oh my word it's incredible.
It still has elements of metal and opera, but it's mostly actually just orchestral, and their albums spin epic stories and tales better than they ever did before with Tarja.
Production is 10/10, and they're doing something really really unique.
I highly recommend the album "Imaginaerum" - it's an experience like no other.
