Depends on my mood.
Probably #1 is scrambled
Then over easy (not too runny)
I often keep hard boiled eggs in the fridge--I'm usually in a rush in the morning so a hard boiled egg and some yogurt works well for me., and always bring a dozen for when we go camping. I hate having to clean pans and dishes when camping.

When at the diner I often order a western omelette.

Also love a good breakfast burrito: Scrambled egg, potato, refried beans, cheese and bacon, topped with sour cream and salsa.

I came across a great way to hard boil eggs. You know how sometimes eggs are impossible to peel. I could never figure out how to get consistently easy to peel hard boiled egg. The answer is to steam them for 15 minutes and then put them into cold water to stop the cooking  process. The steam gets in between the egg shell and the egg membrane.  It works every time. I put one layer of eggs in a steam basket.

I will have to try that. I was doing 1 minute boil > cover and remove from heat 13 minutes > Cold (icy) water.
Results were hit and miss. I have heard that VERY fresh eggs are often harder to peel than eggs that are over a week old.

Cheese omelette with a dollop of salsa on it once plated. I may mix the egg and cheese in a bowl first, for a more quiche-like experience.

This is the correct answer. Though I like some onion and sausage or pepperoni in my omelet too.

If just eating plain eggs then scrambled but I'll eat all forms.
